Brick oven pizza maker Grimaldi’s Pizzeria will open its doors at The Corners of Brookfield on Nov. 10. It serves handcrafted pizzas, calzones and antipasto, as well as a variety of salads.
Located next to Von Maur in the new retail and residential development at Bluemound and Barker roads, the restaurant will have 4,700 square feet of indoor and outdoor space, including outdoor seating for 45 and a main dining room accommodating 102 diners. It’s the restaurant’s first location in Wisconsin.
Grimaldi’s Pizzeria specializes in handcrafted pizzas, calzones and antipasto, as well as a variety of salads and New York-style cheesecakes and desserts made in-house daily. Grimaldi’s also features a full bar serving specialty cocktails, craft beers and a robust wine list.
The Corners location will include an open-concept kitchen and a 25-ton coal-burning oven, which is heated by 100 pounds of coal per day at a temperature of up to 1,200 degrees.
